Chicken Divan

 
This is one of the best meals ever! If I remember correctly, it's one of my dad's favorites as well. This recipe comes from my mom, but it originally came from a friend of hers that she calls "Mom Chestnut". She picked this one up when we were living in Okinawa, Japan.
Sauce:
  • 2 Cans of Cream of Chicken Soup (10 3/4 Ounce cans)
  • 1 Cup of Hellman's Real Mayonnaise (NOT Salad Dressing)
  • 1 Small Carton (8 ounces) Sour Cream
  • 1 Tablespoon Lemon Juice
  • 1 Teaspoon Curry Powder

Other Ingredients:

  • 3 large Chicken Breasts - Diced
  • 2 bags Frozen Broccoli (Optional)
  • 1 1/2 Cup Shredded Sharp Cheddar Cheese
  • Shredded Parmesan Cheese (Sprinkled on top of Chicken)
  • Paprika (Sprinkled on top for color)
  • Cooked White Rice

Directions:

  1. Preheat oven to 350 degrees
  2. Boil the chicken until cooked, (Optional) Cook Broccoli
  3. Mix all sauce ingredients together in a large bowl
  4. Grease a 9"x13" pan and place Chicken (& Broccoli) in bottom of pan
  5. Sprinkle Parmesan cheese over top of Chicken (& Broccoli)
  6. Sprinkle 3/4 cup of Cheddar Cheese over top
  7. Pour sauce over top
  8. Sprinkle the rest of the Cheddar Cheese (3/4 Cup) on top of sauce
  9. Sprinkle top with Paprika for color
  10. Bake for 30-40 minutes
  11. Cook Rice (I use a Rice Cooker)
  12. Serve over warm Rice (Salt & Pepper to taste)
